Induction 'legal' as long as you stay within the amounts allowed per day of cream and cheese. I make one of these most weeks for my easy quick breakfast. It can be adapted to use any meat or cooked veggies you have in the fridge. You can also make this in individual muffin tins for snacks or party food. Ignore the 'cost' bit above - It costs less than a pound (2 US dollars) I calculate. |

Ingredients: 4 medium egg 8 Tablespoon_m(s) 4 fluid ounces of heavy cream 80 Gram(s) 3-4 ounces of grated cheddar cheese 55 Gram(s) 2 ounces of cooked grated Cauliflower 80 Gram(s) 3-4 ounces of cooked chopped bacon 1 Tablespoon_m(s) herbs or spices to taste like parsley flakes |
Directions:
Oil or butter an oven dish - I use one approx 8-9" diameter
Grate the cheese and spread 3/4 of it over the bottom of the dish.
Sprinkle the chopped cooked vegetable over the cheese - I use whatever I have in the fridge, usually cauliflower, broccolli, onions or cabbage. You can also use raw chopped peppers or spinach.
Sprinkle the herbs or spices over this. chopped chives are nice too.
Sprinkle the chopped cooked bacon (or any other meat you like) over the top.
In a bowl or jug break 4 eggs, add the cream and remaining 1/4 of the grated cheese and mix together.
Pour this liquid evenly over the dish and bake in the oven at about 150 C (300 F) till firm to the touch and golden brown.
